This natural processed coffee is grown by small holder producers in the area of Nansebo in West Arsi. The area has rich clay soil that produces complex fruity coffees. Producers hand pick coffee cherries during the harvest season which is from October to January and deliver them to the Mandeyo washing station. Since 2020, Moplaco Trading has been working together with father & son team Digaffe & Andinet who own 4 stations in the Nansebo area. They are continually working to improve their stations, specifically by planting false banana trees and vetiver grasses to help filter water used in processing and provide shade for drying.
Processing
The coffee cherries are dried on raised beds for 2-3 weeks. During this time they are turned throughout the day and the fruit ferments around the bean whilst drying in the sun. This leads to complex fruity flavours being imparted into the coffee beans.
