Flavour Profile: Dark chocolate, Marzipan & Red apple
The Yuc family are a large family of coffee producers and farmers in Guatemala. The family is originally from San Miguel Escobar, a small town in Ciudad Vieja and now own farm land near the slopes of Volcán de Agua, one of three volcanoes in the region. Most of the family are active participants in the Hunapu training program - a training program run by Beneficio Bella Vista.
The slopes of the Volcán de Agua provide rich and fertile ground on which to farm coffee. Most volcanic soils are known as Andisols and are formed by tephr - a mixture of volcanic ash and rock fragments that breaks up overtime, depositing layers of nutrients into the ground. This leads to nutrient rich soil and good drainage which makes for an extremely good coffee growing environment.
