Alexis Guarnizo is married to Diana Gutiérrez, and together they have two children, Lady (10) and Jhon Alexis (6). Situated in the hamlet of El Triunfo, at an elevation of 1,700 to 1,750 masl, Los Lacres benefits from its proximity to the Serranía de Las Minas National Park. Additionally, Tarqui's location near the Magdalena River brings warm, dry air up the mountains during the day, creating a unique microclimate ideal for coffee cultivation. Alexis oversees approximately two hectares of coffee, cultivating varieties such as Castillo, Caturra, and Borbón Rosado. Drawing from traditional Colombian coffee farming techniques passed down by his parents, Alexis employs meticulous processing methods.
The cherries undergo a 24-hour pre-fermentation period before pulping, followed by 36-hour dry fermentation in tanks. At least two washes halt fermentation, and the wet coffee is promptly transferred to raised platform dryers, where it is carefully raked to reduce moisture efficiently. Upon completing the initial drying phase, Alexis allows the coffee to air-dry for 15 to 20 days, adjusting for weather conditions to ensure optimal results.
