Gamaliel Rios Ortiz is a third generation coffee producer from Chiapas. His farm “El Castaño" sits at 1400 masl surrounded by the landscapes of the Sierra Madre - the highest peak within the state's mountain range.
Gamaliel has been managing the farm for the last two years which he inherited from his father Alberto Rios Aguilar. Gamaliel also acquired knowledge passed down from Alberto.
This lot is a combination of Typica and Peñasco varietals processed using the honey method. The ripe cherries were hand picked before being depulped and left to ferment in mucilage for 90 hours. Finally the beans are dried on raised beds.
